MY Homemade Potato Salad

Chopped onion
Sweet Relish
Boiled eggs, diced
Cubed potatoes, cooked
Mayonnaise
Mustard
You can use as much of each ingredient as you like. This is how… I make my potato salad. Skip and Tommy always loved it. Skip still says it’s the best he’s ever eaten.
Put sweet relish, chopped onion in a bowl… let sit together for the time it takes to peel, wash, dice your boiled eggs. I think the flavors meld together, making the onion and relish taste… so good!
Drain your cubed potatoes when they are thoroughly cooked. Put in a big bowl.
Put your diced eggs in with potatoes. Add onion/relish. Put several spoons of mayonnaise (you’ll know what … you … like!) on top of ingredients.
Squeeze mustard on top of all ( remember, you are the judge on how much … you … want to use ). You may want it very ‘yellow’, or very ‘mustardy’. I only want it to be ‘just right’… so, I squeeze ‘what I want’. :)))
Take a big spoon, begin stirring all the ingredients together. Make sure all is mixed well. The more you stir, the creamier it becomes.
I stir all until ‘all is just right’. :))) I ‘know’ when I have it … ‘the way I want it’. You be the judge. I’ve given you the ingredients for the way I make my potato salad. You adjust it your way.
Oh, I put it in a pretty, clear bowl. You might want to sprinkle a little paprika on top… it is pretty! Put a piece of plastic wrap over the top; place in refrigerator. Chill. :)))
